Simply Orange Chicken

Complements of the LooneySpoons Collection from Greta & Janet Podleski

This was a yummy and easy recipe to do and quite healthy when you use chicken breasts!

Ingredients

  • 4 Boneless chicken breasts
  • ¼ teaspoon each salt & freshly ground pepper
  • 1 tablespoon olie oil
  • 1 can (10oz/284ml) mandarin oranges in light syrup
  • 2 tablespoon honey-dijon mustard (we skipped this as hubby & I don't like dijon we just used a regular honey mustard sauce)
  • 1tbsp cornstarch

Sprinkle both sides of chicken breasts with slat & pepper. Heat olive oil in a 10-inch, non-stick skillet over medium high heat. Add chicken & cook for 3 to 4 minutes on each side, until lightly browned & no longer pink in center. Remove chicken from skillet & keep warm.

Add mandarin oranges with their syrup to a food processor or blender. Pulse on and off once or twice until oranges are coarsely pureed (still slightly chunky). Add oranges to skillet along with mustard. Cook and stir over medium-high heat for 1 minute. Whisk together cornstarch with an equal amount of water until smooth. Add to orange mixture in skillet. Cook & stir until mixture is bubbly & has thickened.

Return chicken to skillet. Reduce heat to low. Spoon sauce over chicken, cover & simmer for 3 to 4 minutes, until chicken is hot and completely cooked through.

  1. Thanks for the Recipe on Simply Orange Chicken! I've had orange chicken one time and that was at my oldest daughter's house when I went to help her out with my Grandson right before my Granddaughter was born. I really enjoyed it! Now, my husband will not eat chicken of any kind! I have no idea why, because he eats turkey! He's weird like that! The kids and I love Chicken! This recipe sounds and looks terrific! I do, at times, purchase chicken and when we have spaghetti, I also make the chicken and the kids and I will have Chicken Parm. while hubby just eats spaghetti! I'll have to give this a try one night when I have some leftovers that hubby can eat! Thanks so much for the delicious recipe which you shared with all of us! I really do appreciate it! Thanks again! Michele 🙂

  2. When I saw the picture on the post, I thought it was fish and it looked good. I don't eat meat, other than fish, but I think this sauce could be used for a good, flaky fish, as well. Might have to give it a try!

  15. This recipe sounds amazing! My husband thinks that Americans like their chicken (and other meats) "sweet," and I didn't know what he meant and then I thought about it-- orange chicken, sweet & sour chicken, porkchops & apples, etc. , etc. 🙂 I think I'll have to make this for him and prove to him that sweet + chicken DOES go together! 🙂

  16. This looks so good! I would also use regular honey mustard instead of honey dijon. I`ve got boneless chicken breast in my freezer and trying to think of something different to make with it. Thanks for the recipe!

  18. We Have actually made this dish before and were disappointed. Our recipe called for straight orange juice and made a very too sweet taste. This recipe looks far better! Maybe we;ll try again!
