Delicious Coconut Banana Bread Recipe

There's a crispness in the air as Fall arrives and for some reason that puts me in a baking mood. My family has been wanting me to bake some Banana Bread. In trying to eat healthier, I have been incorporating coconut oil into some different recipes. So, I thought why not give coconut oil a try in my Banana Bread recipe? Can you really improve on any Banana Bread recipe? Yes you can and because I love coconut I decided to make this ia coconut banana bread recipe.

As the Banana Bread baked it filled our home with the delicious scent of fresh baked bread with a hint of bananas and coconut! By the time it was finished baking, the whole family was in the kitchen waiting on a slice right out of the oven. Oh my! It was so delicious! Everyone agreed they loved the taste the coconut oil gave it! We now have a new favorite bread recipe!

It turned out so good and delicious that I want to share the recipe with you so you can enjoy it too! It's an easy recipe that is simple to make. Serve it with a tall cold glass of milk or a hot cup of coffee and delight your family!

Coconut Banana Bread Recipe

Ingredients:

  • 3-4 very ripe bananas
  • ⅓ cup virgin coconut oil (you can use the solid form and just melt it, I get mine at Costco, great price for a big jar that lasts me 6 months or more)
  • ¾ cup coconut sugar some of you have been asking so letting you know I get my coconut sugar at my Costco (you can use white, brown or raw cane sugar but the coconut sugar is low on the glycemic index and is sooo good!)
  • 1 large egg
  • 1 tsp. vanilla
  • 1-¾ cups pastry flour but regular flour can be used too or substitute for whole wheat pastry flour
  • 1-½ tsp. baking soda
  • 1 tsp. cinnamon
  • ½ cup flaked coconut
  • ½ cup dark chocolate chips

Optional topping - 2 tbsps coconut flakes, 1tbsp coconut sugar

The topping is optional, what I did was I put it on one loaf for the last ten minutes of baking, I love it! It's just an added yummy factor to the loaf.

Preparation:

1. Preheat oven to 350 degrees F. Grease a loaf pan (or spray with cooking spray).

2. Place bananas in a large mixing bowl. Mash bananas.

3. Add coconut oil and sugar to the bananas, and beat with an electric mixer until smooth.
4. Beat in egg and vanilla.

5. In a medium bowl, whisk together whole wheat flour, baking soda and cinnamon. Gradually add flour mixture to banana mixture, beating on low speed until well-incorporated, but do not overmix. Overmixing will yield a tough banana bread.

6. Stir in coconut and chocolate chips. Pour coconut banana bread dough into prepared loaf pan.

7. Bake for 55-65 minutes until a knife inserted in the center comes out clean.

Enjoy this delicious banana bread. You can do it with or without coconut of course but I love it with 🙂

  3. I have never tried Banana Bread with Coconut, I will now! I just tried adding it to oatmeal cookies. I added chocolate chips, nuts, and raisins with it, and boy are they filling! Thanks for the idea!

  49. What a brilliant (and delicious!) "tweak": the DARK CHOCOLATE chips ~ makes a real difference! (I confess to using a VERY generous 1/2 cup of the chocolate, er the chips...) Hubbie loved it, so much that I'm a little hesitant to make it again, except for a special occasion.

    Oh and not only does the coconut oil make a huge difference, it just so happen I won some coconut oil ~ a whole GALLON of it ~ so I'm always looking for new (and delicious) new uses. Thanks. Pinned too.

  52. OMG! It looks so delicious! I wanted to reach through the screen and pull a piece out to eat! I really love your recipe! I don't know where I can find coconut oil because I don't have a membership nor do we shop at Cosco. I'm wondering if I can pick it up at the grocery store? This is the time of year that my family starts bugging me to bake as well! Cookies, cakes, bread, etc. I know that they would be happy with anything I make now! Since our financial situation is horrible at the moment, there is not many "goodies" in the house at the moment. You know kids, they have to have their goodies!   57. Ok,so I went to the store the other day to get some coconut oit so that I may try this recipe and I couldn't believe the price. $8.99 for only 12oz. thats crazy. I'm sorry but no recipe, no matter how good is worth paying that much.

    • Hey Heidi, you need to shop around you can get it for way less than that and if you get it in the solid form it's cheaper, you just melt it yourself. Try Costco we get a big huge jar there that lasts me well over 6 months and I use it every day.

  58. I have started adding coconut to so many things. Yesterday I just made chocolate chip, and coconut, cookies 🙂 They are SO good!!! I think coconut oil instead of butter is a great alternative. Adds a whole different flavor profile. Love 🙂

  79. I know you are a VERY healthy person and watch what you eat. I think you do a lot with raw food, not sure but I have read a lot on your page. I think coconut oil is good, I have 3 jars. Not sure about the flour? What would be the best? My Doctor wants me to lower carbs. I just started this product called "A1O" it is a very good source of cleaning up free radicals and I feel better and have so much more resilience for activity.I suffer from RA so it is hard to push too hard but I noticed a big difference with it. I just want to know that this Wonderful looking bread is somewhat healthy.? Thanks

  80. Oh my this looks so good. I have everything to make this in the morning and plan too. I tend to let our bananas go to ripe because my hubby is on chemo and he eats alot of bananas for potassium & simply because he can taste them best since chemo leaves a metallic taste in your mouth. So alot of them go to ripe & I think he could really enjoy this recipe with his morning meal Thank you 🙂

  84. Great idea and use of coconut oil for an elevated flavour! I have always used regular oil or olive oil to keep my banana bread moist ...and never thought about coconut oil! Thanks for the recipe and new idea. =D
