Vietnamese Lemongrass Chicken Skewers Recipe

These Vietnamese Lemongrass Chicken Skewers are so scrumptious they might just become your new favorite summer recipe.

Fresh lemongrass, with its delicate notes of lemon, ginger and mint paired with the rest of the marinade ingredients and tender grilled chicken breast bites and served with peanut sauce creates a delicious meal.


- Boneless and skinless chicken breast Marinade ingredients - Garlic cloves - Lime juice - Fish sauce - Brown sugar - Sesame oil

If using bamboo skewers soak them in warm water for at least 30 minutes so they don't burn on the grill.


In a blender or food processor add all off the marinade ingredients (garlic cloves, lime juice, fish sauce, brown sugar, sesame oil, vegetable oil and lemongrass stalks) and mix for 1 minute until smooth.


Cube your chicken and put it in a large mixing bowl. Pour the marinade onto the chicken and mix well to coat all of the chicken.


Thread cubed chicken onto each skewer leaving a little room at the bottom of the skewer (pointed end).


When ready to grill the chicken, start your BBQ at a medium heat (around 375ºF).
