This Tiramisu Cookie Recipe with its soft & chewy cookies and decadent mascarpone frosting is a tasty twist on the classic Italian dessert.

Trust me when I say you will want to make a lot of cookies when it comes to this recipe, at minimum double the batch.  If you love cookies and tiramisu, these are the perfect treat for you!

INGREDIENTS

– egg – granulated sugar – light brown sugar – vanilla extract – unsalted butter, softened

In a bowl beat the butter, egg, vanilla granulated sugar, and brown sugar until light and fluffy. Add espresso powder and beat until it’s fully incorporated.

Gradually add the rest of the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

– Scoop tablespoon-sized cookie dough balls onto the baking sheet, leaving about 2 inches between each.

Bake cookies for 10 to 12 minutes, r until the edges are set and the centers look just slightly underdone.

Beat the butter & powdered sugar until smooth. Add the mascarpone & vanilla extract a& beat until light and fluffy.
