One Pan Coconut Lime Chicken Recipe

It's a Thai-inspired recipe finished with the delicious flavors of mango and cashews.

It's simple to make, and for those who are looking for dairy-free and/or gluten-free recipes, this can easily be both. My whole family loves this for dinner!


• Chicken breasts • Coconut oil • Coconut milk • Limes

Season the chicken breasts with salt and pepper on both sides.


Heat a cast iron skillet over medium-high heat and add coconut oil. Once the oil is hot, add the chicken breasts and cook for about 6-8 minutes per side, or until fully cooked and nicely browned.


Remove the chicken from the skillet and set it aside. In the same skillet, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
