Enjoy this delicious Caramel Apple Cookies Recipe with Cream Cheese Frosting from the apple-spiced chewy and soft cookies topped with a decadent frosting, small apple chunks and a gooey caramel sauce.

It embodies some of the yummiest flavors of fall. It’s a Crumble style cookie but we skipped the streusel cause we’re all about the cream cheese frosting, caramel and chopped apple pieces.

INGREDIENTS

– butter room temperature – granulated sugar – dark brown sugar – large egg – concentrated apple juice

Preheat oven to 350°F (180°C), line a baking sheet with parchment paper. In a bowl cream together the butter, granulated sugar, and dark brown sugar until light and fluffy. – Add  egg, concentrated apple juice, &      vanilla extract. Mix until well combined.

In the same bowl sift dry ingredients & mix until a dough forms. Scoop cookie dough & place them on the prepared baking sheet. Flatten slightly with the back of a spoon or using your hand.

Bake for 10-12 minutes or until the edges are light golden brown. Remove from the oven and let cool completely on a wire rack.

In a bowl beat butter & powdered sugar until creamy. Add cream cheese & vanilla extract, beat until stiff peaks form. Spread frosting on cooled cookies with piping bag. Top with chopped green apples & drizzle with caramel.

In a bowl, beat butter & powdered sugar until light & fluffy. Add cream cheese & vanilla extract and beat for 3 minutes on high speed until stiff peaks form. Once cookies are cooled, top with cream cheese frosting & sprinkle ground cinnamon on top.
