Unicorn Cupcakes Recipe

How to make unicorn cupcakes (surprise inside!)

Oh, what fun, what little girl or little boy for that matter doesn’t love cupcakes?! Better yet how about some unicorn cupcakes with a tasty surprise inside of them!  These are so easy to make and are always a hit at parties.

Bake as shown or use my French Vanilla Cupcakes Recipe as a base for these yummy treats.

Unicorn Cupcakes with a Surprise in them

These unicorn cupcakes are perfect for a unicorn birthday party or just a colorful celebration for any reason!

Prep Time 1 hour
Cook Time 18 minutes
Total Time 1 hour 18 minutes

Ingredients

  • 1 box of Yellow Cake Mix

1 box of Yellow Cake Mix

  • 3 Eggs

  • 1/2 a cup of Oil

1/2 a cup of Oil

  • 1 cup of Water

1 cup of Water

  • Assortment of Sprinkles ( I used Pink, Purple, and Unicorn Sprinkles)

  • 1 container of Purple Icing 

1 container of Purple Icing 

  • 1 container of Pink Icing

1 container of Pink Icing

  • Cupcake Liners

Instructions

  1. Start by mixing your cake mix, eggs, oil, and water in a large mixing bowl. Mix until smooth.

  2. Line a cupcake pan with liners, and fill each liner 3/4 of the way full.

  3. Bake according to box instructions.

  4. Let cupcakes cool completely, now for the fun part.

  5. Cut the center out of each cupcake, and place aside. I use a spoon and scoop out the middle, about half way down.

  6. Press down on the hole lightly with your finger to clean it up.

  7. Fill the center 3/4 of the way full with sprinkles of your choice.

  8. Place the top back on and gently press it down. 

  9. Now when icing the cupcakes it is best to use an icing kit. Fill one side of your piping bag with purple icing, and one side with pink icing.

  10. Ice your cupcakes as normal, whatever technique you choose.

  11. Serve and enjoy!

Step one

Once the cupcakes have cooled, you will use a spoon to scoop out a small amount of the cupcake on top as shown below.

Fill the cavity you created with some sprinkles and small candy pieces.

Now, you will top that opening with the piece you removed earlier.

Step 4

Now you will top the unicorn cupcakes with icing in a design of your choice.

  6. This is exactly the recipe I was looking to make for my granddaughter’s birthday!
    I pinned it already. She said that she wanted cupcakes and not a birthday cake for her party. But these will be special cupcakes with a surprise inside. If they are a hit, I will be making them for Thanksgiving. Thank you again!!
