Sheet Pan Chicken Shawarma Recipe
We love delicious and flavourful recipes like this Sheet Pan Chicken Shawarma that warms us up from head to toe in these colder months. We took our Delicious Chicken Shawarma Bowl Recipe and made a few tweaks so that the chicken would stay tender while being cooked in the oven on a sheet pan instead of a skillet. The result was yummy chicken that when put on top of naan or pita, your favourite toppings and finished with our tahini sauce makes one tasty meal!

This Sheet Pan Chicken Shawarma is a cozy comfort food recipe for me. I love having a lot of flavour, sheet pan meals are so easy and when we have them with naan or pita everyone can add their own toppings to suit their tastes. These kinds of meals are perfect for us, we get our tasty protein, veggies, carbs (cause I love my carbs, can’t help it) and an amazing blend of flavour. So yummy.
To ensure that the chicken stayed tender and didn’t dry out we marinated in yogurt with the spices. You can marinade it anywhere from 10 minutes to hours but I have found it doesn’t need long to stay tender and flavourful.

What vegetables can you cook with for Sheet Pan Chicken Shawarma?
What vegetables do you like? You can really go with whatever you want. I went with the bell peppers because my husband and daughter both love those and hubby loves onions so the purple onions were added. I like the flavour onions give recipes but I don’t add the onion to my pita, the good thing is you have options!

The veggies you have with your sheet pan chicken shawarma with the naan or pita is also entirely up to you. We tend to like cucumbers and tomatoes and then lots of the tahini sauce. I used arugula instead of lettuce just because the flavour is so good and I find it easier to portion in the arugula over using either big pieces of lettuce or shredded lettuce, again it’s a personal preference. I also like naan or thicker pitas over the thin pita pockets or thinner pitas but again this is personal taste so you do what you like best.

I like my tahini sauce thick but if you want it to be more like a drizzle you can thin it out with a little more water or lemon juice

How long does homemade tahini sauce last?
I put my tahini sauce in a jar and it lasted about 5 days in the fridge. Keep in mind this could vary for you but it should last a few days at minimum.
I’m not going to lie it’s messy to eat this sheet pan chicken shawarma in a pita once you’ve got all the fixings in it and the tahini sauce but it’s so worth! OMG so delicious!

Sheet Pan Chicken Shawarma

It's a yummy chicken recipe with exotic flavours that when put on top of naan or pita, your favourite toppings and finished with our tahini sauce makes for one tasty meal!
Ingredients
- Sheet Pan Chicken Shawarma Ingredients
- 3-4 boneless, skinless chicken breasts cut into 1 inch strips (our chicken weighed 850 grams)
- 1 cup plain Greek Yogurt
- 1 garlic clove, minced
- 2 tsp cinnamon
- 2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 2 teaspoon ground turmeric
- 1/8 teaspoon cayenne pepper
- 2 tsp Kosher salt
- Cracked black pepper (to taste)
- 2 TBSP olive oil
- Purple onion (1 row only on sheet) cut into thing slices
- Red bell pepper
- Orange bell pepper
- Tahini Sauce
- 1 cup tahini
- 3 garlic cloves
- ½ cup lemon juice
- 2/3 cup water
- ½ tsp sea salt
- Pinch black pepper
- For Serving
- Naan
- Baby arugula (if not available green leafy lettuce)
- Sliced cucumbers
- Grape tomatoes sliced or Roma tomatoes sliced not too big of pieces
Instructions
Preheat the oven to 350°F.
In a large bowl combine the yogurt with cumin, turmeric, paprika, cayenne pepper, minced garlic (1 clove), cinnamon, pepper and salt.
Add the chicken to the marinade and toss until fully coated. Set aside.
Spread 1 tablespoon of olive oil onto a large rimmed baking sheet. Arrange chicken, onions, bell peppers on the baking sheet and drizzle with remaining olive oil.
Place the baking sheet on the center rack and bake for 20 minutes until chicken is cooked through and onions and peppers are tender.
Prepare the tahini sauce by placing all ingredients in a medium sized bowl and whisking with a fork until smooth. **It will look like it is separating for a few minutes before it all comes together, this is normal!
Put some arugula (or lettuce) on the naan, then the chicken, roasted veggies, and top with a generous amount of tahini sauce, cucumber, more arugula and sliced grape tomatoes
