Not only is it National Chicken Month but it’s also back to school time for many of you. I remember those days of before and after school pick-ups, arranging rides or picking up my daughter from extra-curricular activities, appointments and more and that was in between working full-time. Oy.
While I’m still just as busy I at least no longer have to worry about school lunches but dinners still require meal planning around here, at least if I want them to be tasty and healthier and not a stream of take-out food. So I like to prep veggies (chop, slice & dice) ahead if I can and plan what protein I’m having with what like with this recipe for Asian Chicken Lettuce Wraps.

The filling for this recipe for Asian Chicken Lettuce wraps has veggies, protein (the shredded chicken), and a yummy peanut sauce that you can make spicy or mild. I love that everyone can add their own toppings as my hubby likes green onions and onions, whereas my daughter I would skip those and I’m the only one who would add more sriracha for an even spicier flavour.
The sauce for the recipe for Asian Chicken Lettuce Wraps
You can make the sauce in advance and store it in the fridge, it also makes for a yummy salad dressing with a salad topped with chicken and other veggies. See another multi-purpose recipe. I also highly recommend using fresh ginger as there’s really nothing that compares but of course in a pinch you can use ginger powder. I buy large pieces of ginger root, cut it up and freeze what I don’t use right away.
What kind of lettuce do you use for lettuce wraps?
You can use any type of green leafy lettuce for lettuce wraps. My favourites are butter lettuce (which is what we used here), green leaf, Romaine lettuce and Romain hearts. My hubby likes iceberg lettuce but I’m not a fan but if you like it go for it. As I’ve already mentioned one of the great things about lettuce wraps is that they are versatile when it comes to the filling and the wrap itself aka the lettuce.
Substitutions for the Recipe for Asian Chicken Lettuce Wraps
Well since you can add the toppings you like this means you’re only limited to what you have in your fridge if you don’t want to go to the grocery stores. Some of the veggies that you might like with these Asian Chicken Lettuce Wraps are:
- Bok Choy
- Celery
- Bean Sprouts
- Zucchini
For most of these if not all you’ll want to sauté the veggies until they are tender but not over cooked.

Recipe for Asian Chicken Lettuce Wraps
This recipe for Asian Chicken Lettuce Wraps is healthy, easy to make and full of flavour. They can be enjoyed as a dinner or even a snack. We love how tasty they are and that they are low in carbs too.
Ingredients
- 1 whole rotisserie chicken shredded *See notes for alternatives
- ½ cup of diced red pepper
- ¼ cup of sliced green onion
- ¼ cup of diced water chestnut
- Head of butter lettuce
- ¼ cup of shredded carrot
- Crushed Peanuts (optional)
- Peanut Sauce
- ½ cup of peanut butter (smooth or crunchy)
- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1 tbsp olive oil
- 1 tbsp water
- 1 tbsp sesame oil
- ¼ teaspoon garlic powder
- 1 teaspoon grated or minced ginger
- 1-2 tbsp of Sriracha optional so add if you want it to be spicy
Instructions
- Mix sauce ingredients together in a small pot or pan and heat on low until mixed and warm. About 5 minutes. You can also add the chopped water chestnuts in the sauce if you liked them warmed up if so warm the sauce a few extra minutes, if not save the water chestnuts as a toping). If you like the sauce as topping set some aside about ¼ of the batch or double the sauce recipe.
- Shred the cooked chicken it to bite sizes pieces
- Add sauce (if you want some as a topping remember to set some aside) into the shredded chicken
- Chop/grate veggies and set aside.
- To assemble the wraps wash the lettuce and fill with chicken.
- Top with toppings including the crushed peanuts if you want, you’ll just need a pinch of each ingredient per wrap
- Serve right away.
Notes
* Instead of a whole rotisserie chicken you can use 4-5 chicken breasts or a mix of chicken breasts and thighs. If you're wanting to use the chicken for other recipes cook chicken breasts for example brushed with some oliver oil and just a bit of salt & pepper and bake in the oven at 350 Celsius.
