Panna Cotta with Raspberry Sauce 

Rasbperry Panna Cotta is an easy, perfect make-ahead dessert that makes every creamy spoonful a delicious sweet and tangy delight with every bite. Panna cotta with raspberry sauce may look like a complicated dessert but it's actually quite simple and is a visual delight making it perfect for any special occasion. Panna Cotta is often served in restaurants for its visual appeal as well as being scrumptious, your friends and family will think you're a dessert master when you share this "fancy restaurant quality" dessert with them.

A few years ago I finally had the pleasure of trying panna cotta for the first time. Why it had taken me that long before I got to try this amazing, delicious, easy dessert I have no idea. It took me even longer to finally make it myself because I too at first thought it would be complicated to make. Imagine my delight when I discovered how easy it was and oh all the varieties you could make.

I started with this yummy raspberry panna cotta recipe and now I've got my family hooked too. It's a dessert that is fabulous for any occasion, any time of the year but I really like to make this creamy Panna Cotta with Raspberry Sauce, especially for Christmas/New Year, Valentine's and birthdays. I could eat it every day lol

What is Panna Cotta?

I had to look it up the first time I tried it so I thought I should share what is Panna Cotta? It's a classic Italian dessert of sweetened cream which is thickened with gelatin. The cream can be aromatized with vanilla, coffee and a variety of other flavorings. You can also add other layers to it like we have with our raspberry layer. It is always served chilled. Panna cotta translates to “cooked cream.” It's basically an Italian creamy custard that is put in the mold of your choice, like our dessert dishes pictured in this recipe. It's now one of my favorite make-ahead desserts.

Ingredients

    Vanilla Panna cotta

    • Heavy cream
    • Granulated white sugar 
    • Vanilla extract
    • Powdered gelatin 
    • Cold water

    Raspberry Coulis

    • Frozen or fresh raspberries
    • Granulated sugar

    How to make raspberry panna cotta

    Instructions

    • In a medium or small saucepan, combine the heavy cream, granulated sugar and vanilla. Heat over medium heat, stirring occasionally, until the mixture begins to simmer. Remove from heat.

    • Let the mixture cool for a few minutes.

    In a separate small bowl, mix together the powdered unflavored gelatin and cold water. Let it sit for about 5 minutes so that the gelatin dissolves, softens and blooms.

    • Pour the cream mixture into the gelatin mixture and whisk well.

    • Pour the mixture into individual ramekins or serving glasses. Fill them about three-quarters full.

    • Let the panna cotta mixture cool to room temperature, then refrigerate for at least 4 hours, or until set. For best results, refrigerate overnight.

    • While the panna cotta is chilling, prepare the raspberry layer.

    Panna Cotta with Raspberry Sauce

    • Place the raspberries and sugar in a saucepan. Heat the mixture over medium heat, stirring occasionally, until the raspberries release their juices and the sugar dissolves. This will take about 5-7 minutes.
    • Once the raspberries have softened and the sugar is fully dissolved, remove the saucepan from the heat.

    • Allow the mixture to cool for a few minutes before transferring it to a blender or using an immersion blender directly in the saucepan.
    • Blend the mixture until smooth and well combined. If using a countertop blender, you may need to blend in batches to ensure a smooth texture.

    • If desired, strain the coulis through a fine-mesh sieve to remove any seeds or pulp, pressing down gently with a spoon to extract as much liquid as possible. This step is optional if you prefer a smoother texture.
    • Allow the coulis to cool completely before using it or transferring it to a jar or container for storage.
    • Serve the panna cotta with two or three tablespoons of coulis, fresh or frozen raspberries and fresh mint leaves for garnish.

    Hint: When pouring the cream mixture into the gelatin mixture, make sure to whisk well to ensure the gelatin is fully dissolved.

    Substitutions for Raspberry Panna Cotta Recipe

    Can I use frozen Raspberries?

    Yes you can, it's why we've listed in the recipe card to use fresh or frozen. However, if you use frozen raspberries you can use the raspberries right out of the freezer, but you might need to simmer the compote for a bit longer to ensure any extra moisture evaporates.

    For a lighter version, you can substitute part of the heavy cream with whole milk or coconut milk.

    You can use vanilla bean instead of vanilla extract. Just keep in mind that vanilla beans leaves vanilla seeds behind. I don't mind them and think it tastes delicious but extract is easier.

    Variations

    Oh variations, let me count the ways, there are so many. For the panna cotta itself as previously mentioned instead of vanilla you could do the following:

    • coffee (using brewed coffee or coffee powder dissolved in water)
    • chocolate panna cotta(milk, white or dark)
    • Lemon

    For the fruit layer, instead of raspberries you can do almost any fruit flavor, here are some of my favorites:

    • strawberries
    • blueberries
    • blackberries
    • mango, or a mango pudding layer
    • peaches

    Equipment for Raspberry Panna Cotta Recipe

    Tips

    • The panna cotta needs to be refrigerated for at least 4 hours or overnight to set properly.
    • The coulis can be made while the panna cotta is chilling to save time.
    • The raspberry coulis can be stored separately in the refrigerator until ready to serve.
    • If you want to unmold the panna cotta, you can dip the ramekins or dessert glasses briefly in hot water before inverting onto a plate.

    Storage

    This raspberry panna cotta recipe can be stored in the refrigerator for up to 3 days. The raspberry coulis can be stored in a sealed container in the refrigerator for up to 1 week. I recommend storing the panna cotta and raspberry mixture separately.

    • 2 cups heavy cream (480 grams)
    • ½ cup granulated sugar (100 grams)
    • 1 teaspoon vanilla extract (5 grams)
    • 2 ½ teaspoons powdered gelatin (7.5 grams)
    • ¼ cup cold water (60 grams)

    Coulis

    • 1 cups (about 150 grams) frozen or fresh raspberries
    • ¼ cup (50 grams) granulated sugar (adjust to taste)

    Instructions

    1. In a saucepan, combine the heavy cream and granulated sugar and vanilla. Heat over medium heat, stirring occasionally, until the mixture begins to simmer. Remove from heat.
    2. Let the mixture cool for a few minutes.
