Pumpkin White Chocolate Chip Cookies Recipe
I don't usually jump on the pumpkin spice bandwagon but for these Pumpkin White Chocolate Chip Cookies I am making an exception. They are simply perfect for these upcoming cold weather seasons. They really do scream fall and are so yummy with a cup of java, tea or even hot chocolate. I don't even care for pumpkin pie but I do enjoy these cookies!
White Chocolate Chips
Pumpkin and white chocolate pairs so beautifully together and this is coming from someone who rarely eats or bakes with white chocolate. Usually white chocolate is too sweet for my taste but it goes so nicely in these cookies.

- White sugar
- Dark brown sugar (you can use a light brown sugar instead)
- White chocolate chips
- All purpose flour

The white chocolate as I've already mentioned so delicious with the pumpkin cookies. One thing I forgot to do that is adding a few of the chocolate chips on top of each cookie, more for looks and extra white chocolate yumminess. This is is not required of course but it always looks nicer on cookies and loaves.
Do you have to use white chocolate chips?
No of course you don't, you can substitute with semisweet or dark chocolate chips. In my opinion any of the are delicious options. I've also thought about using toffee bits or butterscotch chocolate chips. Hmmm oh the possibilities.
How to store these Pumpkin Cookies
You should store these Pumpkin White Chocolate Chip Cookies in an airtight container. They can be left at room temperature in a container for a couple of days but to have them last long keep them in the fridge. You can also freeze these cookies.
Prep Cooking Tip
Blot the pumpkin puree. It has a lot of moisture in it which we don't necessarily need. Put it in either some paper towels or a cheesecloth and gently blot some of the moisture out. You don't want to it to be try, just take out a bit of the moisture.

Pumpkin White Chocolate Chip Cookies

These Pumpkin White Chocolate Chip Cookies are simply perfect for fall and winter and are soft, full of flavour and the perfect fall treat.
Ingredients
- 1 egg
- 2 tablespoon of pumpkin puree
- 1 cup of white sugar
- 1 cup of brown sugar
- 2 teaspoon pumpkin pie spice*
- 2 cups of white chocolate chips
- 2.5 cups of flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup of butter
Instructions
This is a very forgiving recipe, the cookies are soft and moist.
- Mix wet ingredients with the sugar.
- Mix in flour, baking powder, baking soda and mix until well incorporated.
- Stir in white chocolate chips.
- Bake on a nonstick baking sheet for 12-15 minutes at 325 F or until just golden brown.

Don't have pumpkin pie spice?
No problem if you want to make your own you may have some or all of the spices in your cupboard. I know I do. You can of course double or half this depending on how much pumpkin pie spice you want and if you want to use more later!
- 3 tablespoon ground cinnamon
- 2 teaspoon ground ginger
- 2 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
Mix them all together and voila you've got pumpkin pie spice!
