Homemade Pina Colada Popsicle Recipe

In my house, we love our frozen treats all year long, not just in the summer and this pina colada popsicle is a favorite with the family, especially for myself and my daughter. We love the coconut and pineapple together and enjoy this treat any time of the year. While I love the pina colada drink once in a while I prefer to not have any alcohol in the popsicles so that everyone can enjoy them any time of the day. pina colada popsicleNow if you would like to have these pina colada popsicles with alcohol you can add some pineapple rum to have it taste like the adult drink. You'll have to experiment to see how much you can add for your taste and so they freeze. pina colada popsicleIf you like an extra coconut-y flavor you can also add toasted coconut to the mix or even untoasted coconut. I like to add a little bit of sweetened shredded coconut to the mix, just enough for extra flavor but not so much that it's overpowering the pineapple or makes the popsicle too grainy with the shredded coconut. This is completely optional, you could also add chopped maraschino cherries if you want to give it a little something extra. pina colada popsiclesIf you can get fresh pineapple for these popsicles all the better but we know it's not always easy to get so you're good to go with canned or a jar of pineapple chunks. pina colada popsicle close-up

Full fat coconut milk or light coconut milk?

In order to get that rich, creamy coconut flavor it's best if you can use full-fat coconut milk. It's so much richer and just brings these popsicles together.

Yield: 10 small popsicles or 5 medium/large 1x

Pina Colada Popsicle Recipe

Prep Time 5 minutes
Inactive Time 12 hours
Total Time 12 hours 5 minutes

Ingredients

  • 1 cup of coconut milk
  • 1 lime zested
  • 1 tablespoon honey
  • 1 can of pineapple chunks (or fresh ripened pineapple if available)
  • ¼ cup sweetened shredded coconut (optional)

Instructions

  1. Mix coconut milk, honey and lime zest
  2. If adding shredded coconut add to the mix above or sprinkle a small amount in the bottoms of the popsicle mold to have the coconut at the top of the popsicle. If not skip to step 3.
  3. Pour into molds until ¾ way full
  4. Place pineapple chunks in and insert sticks
  5. Freeze overnight – 12-15 hours recommended

Notes

Additional toppings or additions to the popsicle mix:

  • toasted coconut
  • chopped maraschino cherries

  1. OH these look so good. I don't know if I will make them (have to buy all the ingredients) but I have printed it out and on my refrigerator and will droll over it
