Instructions
Crush the Oreo cookies into fine crumbs by using a food processor, blender, or by placing them in a sealed plastic bag and crushing them with a rolling pin or the bottom of a heavy object.
In a mixing bowl, combine the crushed Oreo cookies with the softened cream cheese. Mix well until the mixture is fully combined and forms a thick, dough-like consistency.
Roll the mixture into small balls, about 1 inch in diameter, and place them as a single layer on a cookie sheet. Repeat until all the mixture is used. Place the cookie sheet in the refrigerator and chill the truffles for about 30 minutes to let them firm up.
Hint: If you're worried about the Oreo cookie ball sticking to the cookie sheet you can add a layer of parchment paper first on to the sheet.
In separate microwave-safe bowls, melt the white chocolate and dark chocolate in 30-second intervals, stirring well between each interval, until the chocolate is fully melted and smooth.
Take the chilled Oreo Cookie Balls from the refrigerator. Dip each ball into either the white or dark chocolate, fully coating it. Allow any excess chocolate to drip off, then place the truffle with its chocolate shell back onto the lined baking sheet. You can use a regular fork, toothpick, chocolate dipping fork or a dipping scoop when dipping the Oreo balls.
If desired, sprinkle Oreo cookie crumbs, sprinkles, or drizzle melted chocolate over the truffles for decoration. You can also create a chocolate drizzle effect by using a fork or spoon to drizzle the contrasting chocolate over the truffles. Repeat the dipping and decoration process for all the truffles.
Once all the truffles are coated and decorated, place the truffles on a cooling rack and take them to the refrigerator. Chill the truffles for at least 1 hour, or until the chocolate coating is firm and set.
Serve the Oreo cheesecake truffles chilled and enjoy!

Tips
- Make sure you have room-temperature softened cream cheese. This will make it easier to mix with the crushed Oreos and create a smooth consistency.
- Rolling the mixture into 1-inch balls should yield approximately 24 truffles, but the exact number will vary depending on the size.
- If you prefer a sweeter taste, you can add a tablespoon or two of powdered sugar to the cream cheese and Oreo mixture.
- When melting the white and dark chocolate, be cautious not to overheat them. Use a microwave-safe bowl and heat in 30-second intervals while stirring to avoid burning the chocolate.
- To make the dipping process easier, use a fork, dipping scoop or toothpick to hold the truffles while coating them in chocolate.
- After coating the truffles return them to the refrigerator to allow the chocolate coating to set.
- The chilling time of at least 1 hour is essential to ensure the truffles hold their shape and have a firm texture when served.

Notes
Notes on flavor: The initial crunch from the hardened chocolate shell is combined with a velvety smooth cream cheese filling that is both tangy and creamy. However, these truffles offer a well-balanced level of sweetness as the cream cheese adds a subtle tanginess that helps cut through the sweetness.
