Easy and Tasty Mango Chia Seed Pudding

Chia seed puddings are a fabulous way to get some of this fabulous superfood to help fuel your body and reap the many benefits of chia seeds. Here are just a few of the benefits of chia seeds:
- High in fibre helps you to feel full longer which can help with weight loss or maintaining weight
- A good source of omega-3 fatty acids, antioxidants, iron, and calcium.
- A massive amount of nutrients packed into a small amount of food
- Aids in digestion
- High-quality protein
I love chia seed pudding as quick but packed full of nutrients breakfast or snack and I love its versatility. You can literally have it with any fruit and whatever toppings you like. I just happen to have a love of tropical fruits and oh my coconut too so this mango chia seed pudding topped with coconut is divine for me. Of course, as you can see I also added blackberries, use whatever fruits you have or love to make a chia seed pudding.
Is chia seed pudding for breakfast or dessert?
It’s all of the above! Make this the night before for a delicious breakfast or mid-day snack that seems more like a dessert which you can also have this for dessert of course.

How long for chia seed pudding to set?
The chia seeds absorb the liquid quite quickly but overall the chia seed pudding needs time to set. I would recommend a minimum of two hours to overnight. I usually plan ahead and make a batch of chia pudding the day before I want to eat it.
How long does chia seed pudding last?
Chia seed pudding can last up to five days in your fridge but as always there are always other factors that could affect this. If you have fresh fruit in it and store it that way then it might not last as long. I would suggest storing it without fruit and just add the fruit when you’re ready to eat the pudding.
What kind of liquid do you use with chia seed pudding?
You can use any milk with chia seed pudding however we prefer either almond milk sweetened or unsweetened is fine or my absolute favourite is with coconut milk. I find it creamier and more decadent with full-fat coconut milk. If you want a different flavour altogether for your chia seed pudding you can use flavoured almond milk there’s chocolate, vanilla and coconut or at least that is what we’ve tried.
For our Mango Chia Seed Pudding we used sweetened almond milk this time but as mentioned I also love it with full-fat coconut milk so good and even more of a tropical taste.

Mango Chia Seed Pudding Recipe
Mango Chia Seed Pudding is a delicious treat for breakfast or dessert! Packed with healthy fats and Vitamin C to fuel your day with flavour!
Ingredients
- 2 mangos
- 2 tablespoons crushed freeze dried mangos (optional)
- 2 cups sweetened almond milk (or full-fat coconut milk)
- 1/3 cup chia seeds
- coconut flakes
- 1 tablespoon honey (optional)
- Mint (optional)
- Blackberries (optional)
Instructions
- Combine almond milk, chia seeds, honey and crushed freeze dried mangos. Mix thoroughly and let mixture sit for 1 hour or overnight.
- Dice mangos into small pieces.
- Layer thickened chia mixture and mangos until cup is completely full.
- Garnish with leftover mango pieces and coconut flakes.
- You may also garnish with mint, blackberries and limes.
Notes
Serving Size: 2 (each glass jar holds about 1.5 cups of the pudding)
Add whatever fruit you'd love, these are just some of my favourites and of course, you don't need to add coconut but it's so good!
