Easy Lemon Loaf Recipe with Homemade Glaze

I don’t know about you but my family and I LOVE a good lemon loaf, it’s like we’re addicted to it. Whether I make it with poppy seeds or without I always have to make at least a double batch because they simply don’t last around here.

Can you freeze a lemon loaf?
You sure can, I prefer to use a vacuum seal bag on the gentle setting. I need to remember the next time I make this lemon loaf recipe to make a quadruple batch so that I can actually freeze one or two of these lemon loaves before they’re all gone. They are simply divine to have on any day to be honest but if I don’t put some away and freeze it they are gone within a couple of days.
Is it lemon pound cake?
It depends on who you ask I think but in my opinion this is the same as a lemon pound cake. There are a zillion recipes out there but I like this one because it’s the perfect amount of lemony-ess and easy to make.

Ingredients for the loaf
- All-purpose flour
- Baking powder
- Salt
- Granulated sugar
- Eggs, room temperature
- Butter, softened
- Lemons
- Whole MIlk
Ingredients for the glaze
- Confectioners’ sugar also known as icing sugar
- Milk

How to make the lemon loaf
- Sift together all dry ingredients. In a large bowl, whisk together sugar and eggs until creamy. Add butter and mix thoroughly, followed by the lemon juice and zest.
- Add dry ingredients to the wet ingredients, alternating with the milk. Mix thoroughly.
- Pour batter into greased loaf pan and bake for 45 minutes.
- Make the glaze and pour over cooled lemon loaf. Top with lemon zest if you wish.
What can you serve this lemon loaf with?
It’s great with tea, coffee a glass of milk or if you love lemon loaves as much as we do, all by its lonesome, all that lemon-y goodness.
Is the lemon loaf easy to make?
Yes it is, as long as you follow the instructions. Don’t veer from the instructions unless you’re a pro at making lemon loaves. Once you’ve made it a few times you can play around with it if you like. Until then it’s great as is.

Lemon Loaf Recipe with Homemade Glaze

This delicious Lemon Loaf Recipe is a great addition to your home-baked goods recipes. A delicious loaf with a light glaze is an ideal snack or treat!
Ingredients
Lemon Loaf
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 stick butter (approx. ½ cup), softened
- Juice and zest of one lemon (approx. 2 tbsp lemon juice and 1 tbsp lemon zest)
- ½ cup whole milk
For the glaze:
- 1 cup confectioners’ sugar
- 2-3 tbsp lemon juice (or more if needed)
Instructions
- Preheat oven to 350 degrees F.
- Grease an 8x4 loaf pan with butter and set aside.
- In a medium bowl, sift together all dry ingredients: flour, baking powder and salt. Set aside.
- In a large bowl, whisk together sugar and eggs until creamy.
- Add butter and mix thoroughly, followed by the lemon juice and zest.
- Add dry ingredients to the wet ingredients, alternating with the milk. Mix thoroughly.
- Pour batter into greased loaf pan and bake for 45 minutes. Remove from pan and cool on a wire rack.
- Mix together confectioners’ sugar and lemon juice. Use enough lemon juice to make it a pourable glaze. Pour over cooled loaf. You can top with lemon zest if you like. Serve and enjoy.
Notes
You can add more lemon zest to the batter and also on top of the glaze if you want a more lemon-y test.
If you use lemon extract, use less and note that the taste is not the same but it's an alternative. If you don't have fresh lemons then yes the lemon juice in the bottles can be used but fresh lemons are the best.

I do not have whole milk, what would be a good substitute?
You can use 2% but keep in mind this most likely would alter the flavor of the lemon bread. If you have it put some heavy cream in with the 2% you’ll have to play with the ratio. You can also try melted butter in skim, 1% or 2% milk but as I haven’t done it myself I can’t guarantee how it would come out. I wouldn’t put more than 2tsp of melted butter in the milk though.
