Chicken Thighs vs Chicken Breasts
I used chicken thighs for this recipe and I find it easier to use boneless, skinless chicken thighs. You could do it with the skin on but you would want to crisp the chicken skin in the oven just before serving. I have not tried this one with chicken breasts. It can be done but you’ll have to adjust the cooking times and keep in mind it will be different than having chicken thighs.
Tips for cooking Honey Garlic Chicken Thighs Slow Cooker
- Garlic: While not required I recommend mincing fresh garlic cloves for a deeper flavour.
- Honey: You can use your favourite honey. I personally like a darker honey but I’ve used in the past whatever I have in the cupboard. Pure maple syrup is also a good substitute.
- Soy Sauce: With how much we use I prefer to use a low-sodium soy sauce so it’s not so high in sodium. You can also use regular soy sauce, or tamari or coconut aminos.
- Flip the chicken halfway through if you can to ensure that yummy honey garlic sauce seeps into the chicken for all the flavour.
After the chicken is cooked and removed from the slow cooker, we then add the cornstarch directly to the crockpot to thicken the sauce. If you prefer it more runny you can skip the cornstarch or add less of it. If it’s too thick after you’ve added the cornstarch just ad more water a little bit at a time.
Leftovers
What’s that? Kidding, we usually have some leftovers but not much. You can just put it in an airtight container and refrigerate with the sauce for 3-5 days, or freeze for 3 months. We love having the cooked chicken marinating in the honey garlic sauce overnight for an even more intense flavour the next day.

Honey Garlic Chicken Thighs Slow Cooker

This Honey Garlic Chicken is an easy and delicious slow cooker dinner, with a delicious sticky sweet sauce on tender and flavourful chicken thighs. It's bound to become a family favourite. Serve over rice, vegetables and more. Crockpot meals are perfect for the colder days that come with fall and winter.
Ingredients
- 6 boneless, skinless chicken thighs (about 1 1/2 pounds)
- 1/3 cup low-sodium soy sauce
- 1/3 cup honey
- 1/4 cup hoisin sauce
- 2 teaspoons chili paste (we used sambal but sriracha, or another hot sauce of choice can be used)
- 4 cloves garlic minced
- 1 tablespoon rice vinegar
- 2 tablespoons cornstarch
- 2 tablespoons of water
FOR SERVING
- White rice
- Toasted sesame seeds
- Chopped green onion
- Snap/sugar peas, Chinese broccoli, carrots, broccoli etc.. (veggies of choice)
Instructions
- Place the chicken in the bottom of a 6-quart or larger slow
cooker. In a medium mixing bowl whisk together the soy sauce, honey, hoisin sauce, chili paste (sambal), garlic, rice vinegar and 2 tbsp. of water. Pour over the chicken. - Cover and cook on HIGH for 2 to 3 hours and flip the chicken
over once halfway through to coat both sides. (this is not required but a recommendation). - Every slow cooker will be different so you may have to adjust
cooking times and temperature. We cooked these thighs on high for 6 hours, but others have been able to do this on low in less time. Periodically check the chicken to see how cooked it is. Chicken should reach an internal temperature of 165 degrees F on an instant-read thermometer. - When the chicken is done, remove to a plate and let it cool
slightly. Whisk the cornstarch into the slow cooker cooking liquid. Cover and cook on high for 15 minutes, until the sauce thickens slightly, stirring occasionally. If you want a thicker sauce cook in the slow cooker on high longer. - Shred the chicken and place it back in the slow cooker. Stir and coat the chicken with the honey garlic sauce. Serve over rice and/or veggies and sprinkle with green onions and sesame seeds (optional).
