Tips for making Grilled Chicken Gyros
Use boneless, skinless chicken tenders or chicken breasts
I find using chicken tenders to be the easiest for this recipe but if you cannot find any, regular chicken breast works great. Just cut into strips and tenderize any thicker pieces so that the chicken can cook evenly.
Marinate the chicken
Marinating the chicken will infuse it with a delicious flavor. Our simple marinade gives the chicken tons of flavour. I like to prepare the chicken and marinate in advance, like the night before or in the morning. Then all you need to do is grill the chicken and dinner is basically ready. Makes for an even quicker meal.
These are also great to make in advance and meal prep. Just leave all the components separate and assemble right before eating.
Preheat the grill:
It's important to preheat your grill to high heat before cooking the chicken. This will ensure that the chicken gets a nice sear and cooks evenly. Cook the chicken until it reaches an internal temperature of 165°F: Use a meat thermometer to check the temperature of the chicken as it cooks. When grilling, just place on the pan or grill and allow each side of the chicken to get a nice sear and grill marks. About 2-3 minutes per side depending on how thick the pieces are.
I love using the skewers but if you don’t have any on hand, go ahead and skip them and just grill the chicken right on the pan or grill.
Let the chicken rest: Once the chicken is done cooking, let it rest for a few minutes before slicing. This will help prevent the juices from running out and keep the chicken moist.
Serve with fresh toppings: Gyros are typically served with fresh toppings such as chopped tomatoes, cucumbers, red onions, and Tzatziki sauce. Consider adding some feta cheese or Kalamata olives for extra flavor.

How do you store Grilled Chicken Gyros?
Store these Chicken Gyros in an airtight container in the refrigerator for up to five days. I recommend disassembling the gyros to avoid the pita from getting soggy.
Can I eat these warm or cold? These are best served right warm and right after the chicken is cooked.
Variations and substitutions:
- Pita bread is the traditional bread for gyros but flatbread or even naan can work really well too.
- Substituting the chicken for pork, beef or falafel is a great way to switch this recipe around and makes for a great gyro.
- So many vegetables can also be used in these gyros. Consider adding in cucumber, avocado or peppers. Although they may not be traditional, it sure will be delicious.
