Green Goddess Chicken Thighs Recipe

Packed with flavour, this Green Goddess Chicken Thighs recipe is quick and easy to make and the Green Goddess dressing takes this meal to the next level. The chicken is juicy and flavourful and dressing serves as the marinade but can also be your salad dressing, dip for veggies and so much more.

This recipe is perfect for the summer barbecues that we love. We're getting ready for our May long weekend and this is definitely on the menu!

Green Goddess Dressing/Marinade

Don't let the fact that the Green Goddess dressing has anchovies in it deter you (unless of course you have an allergy to it). My hubby and daughter would have turned their noses up at that if I had told them in advance but since they didn't know until they tried it, they LOVED it. Seriously they loved it and were shocked about the anchovies as neither of them had ever had Green Goddess dressing before.

This delicious dressing/marinade can be ready in just a couple of minutes. As mentioned we think it's fabulous as a marinade but if you prefer you can skip marinating the chicken with it and just use it as dressing on top of your chicken whether it's with a salad, rice etc..

Another fabulous thing about this dressing is you can switch up the soft leafy green herbs with what you have access to/have on hand, tarragon, dill, mint, parsley and/or cilantro. I like using all of them but I couldn't fresh for all this time so I substituted with dry. My bad I forgot to add the dill to the ingredients photo, sorry. You can make it without dill, it's up to you, play around with it and see what your tastebuds like the best.

Tip for Green Goddess Chicken Salad

Make some cuts in each of the thighs before adding the marinade so that it seep into the chicken for even more flavour.

You can make the green goddess chicken in a skillet or on the grill. We did it on a grill but I used a grill pan to make it easy to take off and on the grill and because I had to take photos haha. It's easier to clean the grill pan I find than the grates on the barbecue. The chicken takes about 10 minutes or so to cook. One of the easiest, tastiest chicken recipes you'll try!

What if I don't like anchovies?

It really doesn't taste like anchovies, I promise, you can try adding more mint and/or dill or if you're opposed to the anchovies entirely take them out and try capers. Just make sure to have a creamy, lemon-y base, we like it with the mayo and sour cream but you can also use Greek yogurt and I've seen some people use tahini but I've not tried it with tahini or capers.

Chicken Thighs or Breasts for Green Goddess Chicken Salad?

I like skinless, boneless thighs, as I've been known to put something on the stove and/or grill and go and do something else, you know multi-tasking (sort of lol) and then forget about what's cooking. Fortunately chicken thighs are forgiving and generally you'd have to burn them to a crisp before they're dried out. If you're not as bad as me then go for chicken breasts, if you don't overcook them they can be very juicy and tender. Use a thermometer to make sure they are cooked through to an internal temperature of 165°F (74°C). You can also check out a very handy cooking chart from chicken.ca.

When it comes to our food that I cook I want to make sure I have quality ingredients as what we eat fuels our body and more.  It’s why we always buy and eat only chicken that has the Raised by a Canadian Chicken Farmer logo on it (like the one below). I know that I’m getting quality Canadian chicken which is grain-fed, free of hormones and steroids, that’s important to me! Not only that but Canadian chicken is raised here in Canada according to nationally-set, mandatory food safety and animal care standards.

Green Goddess Dressing Tip

If you want to make the green goddess dressing not as think you can add a little bit of milk or water to thin it out. Start with a small amount, such as 1 tablespoon, and stir well. Keep adding more liquid a little bit at a time until you reach the desired consistency. Another option is to adjust the ratio of sour cream and mayonnaise. If you want a thinner dressing, you can increase the amount of sour cream and decrease the amount of mayonnaise. Sour cream has a thinner consistency than mayonnaise, so this will help to make the dressing more liquid.

Make the Green Goddess Dressing Ahead of Time

Green goddess dressing will keep in the fridge for up to seven days as long as it's in an airtight container like a mason jar. Feel free to make it in advance to enjoy on your salads or in preparation of using it as a marinade for this recipe. I like to marinade the chicken the night before if I think of it but the beauty of this one is that if you don't you can marinate it for as little time as you have and just add more of the dressing after it's cooked if you want a more intense flavour. As previously mentioned if you don't want to use it as a marinade, use it to as just a dressing on your chicken (like in the photo below), it's a lighter flavour but still yummy.

We enjoy a more intense flavour so I like to marinate the chicken first. Whichever way you choose it's still delicious and you should have tender and juicy chicken.

Green Goddess Chicken Thighs

Cook Time 15 minutes
Additional Time 3 hours
Total Time 3 hours 20 minutes

Ingredients

  • 8 skinless, bone-in chicken thighs (2 lbs or 900g )
  • Salt and pepper, to taste
  • 4 tablespoons olive oil (60 ml)

Green Goddess Dressing:

  • 1 cup mayonnaise (240 ml)
  • 1 cup sour cream (240 ml)
  • ½ cup chopped fresh parsley (30 g)
  • 4 tablespoons tarragon, fresh or dried (12 g)
  • 4 tablespoons Dill, fresh or dried (12g) (or to taste)
  • 6 mint leaves
  • 6 anchovies
  • 2 garlic cloves
  • 2 tablespoons lemon juice (30 ml)
  • 2 tablespoons white wine vinegar (30 ml)
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Make the green goddess dressing combining mayonnaise, sour cream, parsley, tarragon, dill, mint leaves, lemon juice, white wine vinegar, Worcestershire sauce, and garlic in a food processor or blender. Blend until smooth.
  2. Puncture or make small cuts into the chicken thighs and then place in a large ziploc bag or airtight container and pour half of the green goddess dressing in with it, make sure to coat the chicken. Seal the bag to remove as much air as possible and allow the chicken to marinate in the fridge for 3 hours to overnight.
  3. When ready to cook, preheat your grill to medium-high heat.
  4. Grill the chicken for 7-10 minutes on each side, or until the internal temperature reaches 165°F (74°C).
  5. Once the chicken is done, remove it from the grill and let it rest for a few minutes before serving.
  6. Serve the grilled chicken thighs on top of salad (rice, pasta quinoa etc..) and garnish with lemon, if using.
  7. Drizzle the green goddess dressing over the salad and chicken.

Notes

If you want to make the green goddess dressing more liquid, you can add a little bit of milk or water to thin it out. Start with a small amount, such as 1 tablespoon, and stir well. Keep adding more liquid a little bit at a time
until you reach the desired consistency. Another option is to adjust the ratio
of sour cream and mayonnaise. If you want a thinner dressing, you can increase the amount of sour cream and decrease the amount of mayonnaise. Sour cream has a thinner consistency than mayonnaise, so this will help to make the dressing a thinner consistency.
