Tips for Making this Funfetti Cookie Recipe
- Make sure you have fresh sprinkles. I know too many of us have these decorative colorful goodies in our cupboard but more often than not they’ve been in there too long so they are most likely stale. Stale sprinkles taste terrible and will affect the taste of your cookie. Get some fresh sprinkles which are readily available at almost any store and/or on Amazon.
- ALWAYS gently fold the sprinkles into the dough using a rubber spatula. Under no circumstances should you use an electric mixer to add your sprinkles to the dough, the sprinkles will break.
- Make sure you chill your dough. If you skip this step, the cookies will spread too much and become flat and too crisp.
- The butter should not be too warm before you add the sugar. If the butter is too warm it will melt the sugar and give you a greasy consistency in your cookie and/or the cookies will spread too much.

This Funfetti Cookies Recipe is a delicious treat of soft and chewy sugar cookies with colorful and decorative sprinkles. The funfetti sugar cookies are very easy to make from scratch with ingredients you probably already have in your kitchen.
Ingredients
- 1 ½ cups all-purpose flour (187 grams)
- ½ teaspoon kosher salt
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ½ cup unsalted butter, room temperature (1 stick, 113 grams)
- ¾ cup granulated sugar (150) grams
- 1 large egg
- 1 teaspoon vanilla extract
- ⅓ cup rainbow jimmies sprinkles, plus more for topping cookies if desired (66 grams)
Instructions
- Start by lining 2 cookie sheets with parchment paper.
- Add flour, salt, baking soda, and baking powder to a small bowl and mix with a whisk to combine. Set aside.
- In a large bowl, cream the butter and sugar with a mixer until it is light and fluffy.
- Scrape the bowl and add the egg and vanilla. Beat until combined.
- Scrape the bowl again and add all the dry ingredients. You can use the mixer on the lowest setting until the ingredients are just combined. Do not overmix.
- Fold in the rainbow jimmies sprinkles with a rubber spatula.
- Scoop the cookie dough onto the parchment-lined cookie sheets using a medium-sized scoop.
- Chill the dough for a minimum of one hour to overnight.
- Once ready to bake, preheat the oven to 350 degrees F.
- Arrange the cookie dough balls onto the parchment-lined cookie sheets leaving 3 inches between each cookie.
- Bake for 9-11 minutes or until the edges of the cookies are set (slightly underbaked is good)
- Let the cookies cool on the baking sheet for 2-3 minutes before transferring them to a wire rack to finish cooling.
