I love salads but sometimes I want something a little different and this Fennel, Cranberry and Grapefruit Salad is a lovely substitute for salads with lettuce. The fennel and almonds give it some crunch and flavor while the grapefruit gives a bit of refreshing tartness and top that with the cranberries and you have a salad bursting with flavor. Fennel, Cranberry and Grapefruit Salad - Cranberry Salad

Fennel, Cranberry and Grapefruit Salad

Fennel, Cranberry and Grapefruit Salad refreshing summer salad

Enjoy this refreshing Fennell, Cranberry and Grapefruit Salad Recipe any time of the year. We love the blend of flavors between the slightly tart grapefruit to the dried cranberries

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 10 minutes

Ingredients

  • 1 Fennel Bulb, large
  • 1 jar or 1 large grapefruit  Grapefruit sections, cleaned of pith & membrane, and sweetened
  • ½ C Cranberries, dried
  • ¼ C  Almonds, sliced and toasted
  • 2 Tbsp. Balsamic glaze

Instructions

Using a mandolin or a very sharp knife, cut the fennel in very thin slices. Put into a large bowl
Drain the grapefruit from the juice, reserving 1 tablespoon
In a small container, mix the cranberries in with ¼ to ½ Cup of boiling water to rehydrate for 5 minutes.
Arrange the grapefruit on top of the fennel in the salad bowl.
When cranberries have cooled down, arrange them on the salad and top with the sliced almonds.
Upon serving, combine the reserved 1 Tbsp. of grapefruit juice with the balsamic glaze, and drizzle the dressing over the salad, toss and serve.

  1. I have never used fennel, but watch cooking shows all the time where they use it. I also love grapefruit and do not see a lot of recipes where grapefruit is used! This sounds amazing!! I will def. try this, and then will also try switching it up by adding pecans and dried cherries the next time, making it a different meal!! Thanks for this!

  9. This sounds really good and healthy. I've never tried fennel but looked it up and it is loaded with nutrients, like protein, high fiber, and so so much more. I enjoy salads year round and especially during summer.

  17. I would try both the recipes on this page, the fennel salad and the hawaiian bbq chicken. They would probably go together pretty well actually. I imagine trying to cut the fennel without a mandolin is almost impossible for this recipe.

  20. I'm ready for some new salad ideas that don't use lettuce. Seems like every year there is some kind of lettuce recall, so it's almost like you have to keep it for awhile before using it to be sure it isn't contaminated...and that's just crazy. This looks like a nice light and cool replacement for a lettuce based salad.

  23. Fennel has some incredible health benefits. I usually use it in soups. I have never tried it in a salad. I love that this is a unique salad. I will need to try it. It looks super refreshing for the summer.
