Why You’ll Love This Strawberry Mousse Pie
Simple to make – This Strawberry Mousse Pie is an easy recipe to make with simple ingredients. I don’t recommend using frozen strawberries as that would add too much moisture to the pie. You want fresh strawberries and it will just taste better too.
No-Bake – No need to warm up the house by turning the oven on, this is a no-bake strawberry pie recipe which is another reason it makes for the perfect dessert on a hot day. You can also freeze this pie (without the whipping cream & strawberries on top) for an even ahem “cooler” dessert in the summer. A frozen strawberry pie, just add the strawberries and whipped cream when you’re ready to serve.

INGREDIENTS
- graham crackers
- unsalted butter, melted
- fresh strawberries, hulled
- granulated sugar
- heavy cream
- powdered sugar (sorry we missed it in the photo)

INSTRUCTIONS
- Make the graham cracker pie crust; In a small bowl, mix crumbled graham crackers and melted butter until combined.
- Press tightly into a pie pan. ( I used a 9-inch but also 7-inch pan can be used.)
- Put it in the fridge to rest for 1 hour.
- Make the strawberry sauce; pulse 1 cup of strawberry with 1/4 cup of sugar in a food
processor. Strain into a saucepan and bring to a boil and let it cool. - Prepare the strawberry mousse in a stand mixer (or hand mixer); In a large bowl with the whisk attachment whip the heavy cream until stiff peaks form.
- Start adding the strawberry sauce (in 3-4 times) folding with a spatula slowly and
carefully until it’s fully blended. - Pour the pie filling/mousse into the pie pan over the pie crust and let it cool in fridge until set a minimum 2-3 hours.
- Decorate it with whipped cream and strawberries.
Substitutions for No Bake Strawberry Pie
If you would like more pie filling (higher) and thicker than whipped cream you can do the following:
- Substitute Cool Whip for the whipped cream. I prefer the taste of whipped cream but if you like Cool Whip go for it, you can probably make it a stiffer mousse and higher.
- If you want it even thicker you can use a 3 ounce package (85 g) of strawberry flavored jello and fold it into the whipped cream (or cool whip). You may need to adjust quantities of the whipped cream to accommodate the jello.
STORING PIE
- Store. Store leftover pie in the fridge with plastic wrap over it (loosely). If not serving your pie immediately wait to add the whipped cream and sliced strawberries. can be stored for 3-4 days.
- Freeze. You can freeze this pie for up to 1 month. As sugested earlier you can serve it frozen for an extra cool summer dessert. I don’t recommend thawing the pie, once you’ve froze it it’s best served as a frozen dessert. If you thaw it the consistency of the pie filling can vary.

- 1+ 1⁄2 cup heavy cream
- 1/4 cup powdered sugar
