This Pecan Chicken Salad Sandwich whether on a croissant, bread or baguette is fabulous meal any time. You can utilize leftover chicken, chicken thighs and/or chicken breasts and it’s easy to make. It’s just loaded with flavour, you can’t go wrong with this sandwich.

Pecan Chicken Salad Sandwich
I love this pecan chicken salad sandwich on a croissant, the light and flaky pastry is perfect and the chicken salad is full of flavour. It’s a great summertime sandwich.
Do you have to use pecans?
No you don’t but we just like the crunchiness of them paired with the celery and cranberries it’s so yummy. You could use other nuts or if allergies are a concern skip them. Diced pickles are a yummy alternative too.
Chicken breasts or chicken thighs?
Whichever you prefer. Each one has its advantages and the taste will be slightly different for each. Thighs are generally more economical and have more fat but are generally more tender and juicy. Chicken breasts are more expensive (but still reasonable) and I find it’s a great choice for chicken salads but again either one works!
Can you make the chicken salad in advance?
You bet you can and in fact, I recommend you do so. If you can make it the night before that’s perfect to let the flavours enhance in the chicken salad. I recommend at least 4 hours but if you don’t have time it’s also fine to make it and eat right away.
Croissants or Bread?
Either works as you can see so whatever your heart desires. I love them on croissants but it’s tasty on your favourite bread too. You could also make them as wraps.
Whether it’s chicken breast of chicken thighs that you use for this recipe remember that quality matters. That’s why I only buy chicken with the Raised by a Canadian Farmer logo (see below) on it as I know it guarantees quality. This logo also ensures that the chicken you buy has come from a farm that has a mandatory, robust, third-party-audited Animal Care Program and adheres to a strict mandatory On-Farm Food Safety Program. If you don’t see the logo below at your local grocery store, ask a manager to bring it in, it’s worth it!
What can I use instead of Greek Yogurt?
If you’re not a fan of Greek yogurt you can substitute for sour cream. It will add a different taste but I think it’s still delicious.
Recipe Variations
- Instead of celery add diced cucumbers or pickles
- Add diced avocado
- Instead of pecans add any other favourite nuts
- Less carbs, skip the croissants and bread and have in a salad or a bed of plain lettuce
- Use any type of your favourite bread
Can you serve these sandwiches for a party?
Yes, you can! You can either use mini croissants or cut the croissants in half (before you fill them with chicken salad) or if using bread just cut them into quarter pieces. They are great for any gathering!

Chicken Salad Croissant Sandwich Recipe

This croissant chicken salad sandwich is perfect for those hot summer days but they can be served year-round. They are easy to make and loaded with flavour.
Ingredients
- 2 boneless, skinless chicken breasts (450 grams)
- ½ cup mayonnaise (115 grams)
- 2 tablespoons plain Greek yogurt (30 grams)
- 1 tablespoon lemon juice (15 grams)
- 1 tablespoon honey (21 grams)
- ½ teaspoon garlic powder (1.5 grams)
- Salt and pepper to taste
- ¼ cup chopped celery (35 grams)
- ¼ cup chopped dried cranberries(40 grams)
- ¼ cup chopped pecans(30 grams)
- Sliced bread or croissant
- Lettuce leaves
Instructions
- Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper and place them on a baking sheet. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C). Let cool.
- While the chicken is baking, prepare the dressing. In a medium bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, honey, garlic powder, salt, and pepper until smooth.
- Once the chicken has cooled, shred it with a fork.
- Combine in a medium bowl the shredded chicken, mayo dressing, celery, dried cranberries, pecans, and stir until everything is well combined.
- Place a lettuce leaf on each slice of bread.
- Divide the chicken mixture evenly among the croissants/bread, spreading it out in an even layer.
- Serve and enjoy!
