Chicken Lasagna Roll Ups Recipe
Yahoo it’s National Chicken Month and we’re sharing a Chicken Lasagna Roll Ups recipe. It’s a simple twist on a lasagna where the lasagna noodles are filled with a delicious mixture of chicken, veggies, cream cheese, cottage cheese (or ricotta) and more. This recipe is a healthier version and a delicious way to get your family to eat more veggies, especially your picky eaters. Turn a regular chicken lasagna into an easy to make serve roll up. Individually portioned they are perfect for a potluck or any gathering!

In the past I’ve shared a lot of diverse recipes, including several Vietnamese food recipes which is from my culture. I’ve also shared several other Asian recipes, Peruvian, Mexican, Moroccan, Jamaican and the list goes on. I have only shared a few Italian inspired recipes like our Chicken Scampi, so I thought this Chicken Lasagna Roll Ups recipe was another yummy one to share. It was inspired by the Three Cheese Chicken Lasagna Roll Ups Recipe from Chicken Farmers of Canada.

Tips for Chicken Lasagna Roll Ups
- Make the lasagna noodles al dente so they don’t get all soft and mush
- You can use either ricotta or cottage cheese
- Want this to be a freezer meal? Do everything except baking it, freeze before baking.

Chicken Lasagna Roll Ups Recipe
A delicious twist on a classic, Chicken Lasagan Roll Ups! This recipe is a healthier version and a delicious way to get your family to eat more veggies. It's an easy make ahead meal that is also freezer friendly.
Ingredients
- 12 lasagna noodles
- Olive oil
- 1 lb ground chicken
- 1 onion, minced
- 2 cloves garlic, minced
- 1 zucchini, small, grated
- 1 carrot, grated
- 6 mushrooms, minced
- 2 1/2 tsp oregano, dried
- 2 1/2 tsp basil, dried
- 4 oz cream cheese, cut into cubes
- 1 cup cottage cheese
- ½ cup Parmesan cheese, freshly grated
- 3 cups your favorite spaghetti sauce*
- salt, to taste
- black pepper, freshly ground
- 1 cup mozzarella cheese, grated
- 8 ounces fresh mozzarella cheese, thinly sliced
- Italian parsley for garnish along with parmesan to sprinkle on top.
Instructions
Keep in mind that oven temperatures vary from oven to oven and that this and your ingredients etc.. can all affect how slow or fast any recipe cooks. Please check on the dish while baking, if the top is getting golden brown everywhere it's a good indication it could be ready.
- Preheat oven to 350°F (175°C).
- Cook lasagna noodles according to package directions. Make the al dente (on the firmer side) Run under cool water once you have drained them and set aside.
- Heat up the olive oil in a skillet and sauté the ground chicken over medium heat until it is no longer pink. Remove from the skillet and set aside. In the same pan, add a little more oil and sauté the onion and garlic until soft and translucent.
- Stir in the zucchini, carrot, and mushrooms and continue to sauté until tender. Stir in the oregano, basil, salt and pepper, then add the chicken back into the pan and stir. Turn the heat down to medium-low and add the cream cheese cubes, moving them around and stirring until they melt into the meat and vegetables. Remove from the heat and allow to cool slightly.
- Transfer the chicken and vegetable mixture to a bowl then stir in the cottage cheese and ¼ cup (60 mL) of the Parmesan. Put the bowl in the fridge and let it cool for about 20 minutes.
- Spoon about 1 cup of spaghetti sauce into the bottom of a 9×13 inch pan, or just enough to coat the bottom.
- When your filling is cool, you can assemble the roll ups. Lay a noodle in front of you and spoon a few tablespoons of filling onto it. Spread over the entire noodle. Starting at one end, roll it up. Some filling will drop out the sides or the end, that's okay. Set the filled noodle seam side down on top of the spaghetti sauce in the dish, and continue until you have filled all the noodles.
- Spoon the remaining spaghetti sauce over top and sprinkle with shredded mozzarella and remaining Parmesan. Add a slice of the fresh mozzarella on top of each roll.
- Bake for about 30 minutes until everything is bubbly and hot, then remove from the oven and let it sit for about another five minutes before serving.
- Sprinkle with Italian parsley (optional).
Notes
* For the "spaghetti sauce" I personally use an almost plain tomato sauce but one with garlic. I prefer this so I have the
option of adding more spices if I want to, which often times I do. I tend to add more oregano and basil than what I have on the recipe. We are also heavy handed with the parmesan.
You can use any mushrooms you want, I like cremini.
Don't have some of the veggies? You can try substituting or skipping them. Cauliflower & broccoli could also work.

These delicious Chicken Lasagna roll ups are also perfect as leftovers! Warm them up in the microwave and serve with salad and/or garlic bread if you want.
You can’t go wrong with this yummy recipe. You could also try it with cauliflower instead of zucchini and/or carrots. I think it could be quite yummy with cauliflower or try some other veggies and see what works for you!
