BBQ Chicken Flatbread

This BBQ Chicken Flatbread is an easy and quick meal to put together and it's packed with scrumptious flavours. It's perfect for lunch or dinner any day of the week. To give it even more depth of flavour you can marinate the chicken overnight but if you don't have time that's okay too, it still makes for a tasty meal. I got this tasty recipe from Chicken.ca and just built a bit on it for my own tastes. I love their site for recipe inspiration.

BBQ Chicken Flatbread or BBQ Chicken Caprese Flatbread Pizza?

For clarification this is not two recipes but I put BBQ Chicken Flatbread and BBQ Chicken Flatbread Pizza because everyone searches for recipes differently. Some of you will chicken for BBQ Chicken and some will search for Chicken Caprese and the list goes on. Plus the Google gods as I call them may not show you both if you only search for one. Plus not all of you may want to make it a full on Chicken Caprese, shocking I know but I get that people like options.

Tips for Cooking Chicken Caprese Flatbread on the BBQ

I did this recipe entirely on our BBQ but if you don't have a grill you can also easily make this on the stove and in the oven, make sure to check for those tips in the recipe card. I used a cast-iron grill pan on my BBQ. Why? It's so much easier to clean afterwards than trying to get those chicken pieces off of the grate of the BBQ.

Even if I oiled it down enough I just find the pan easier and as we all know flare-ups happen on a BBQ so the pan also helps to avoid the consequences of flare-ups. I also added oil to the cast-iron pan, again so the chicken wouldn't stick to the pan and a bit more flavour too.

Balsamic Reduction 

The balsamic reduction is the icing on the cake or in this case the perfect topping to complete this caprese chicken flatbread pizza recipe. You can totally skip it but we love it and you can easily make your own or buy it, you have options.

My family loves meals like BBQ Chicken Flatbread because they can each put their own favourite toppings on it. My hubby likes raw onions whereas my daughter and I don't and I love the fresh herbs like basil and the arugula oh my. We all agree that the chicken thighs marinated in balsamic vinegar, garlic and honey is so yummy and is the centrepiece of this meal.

Chicken Thighs or Chicken Breasts?

I went with chicken thighs this time because they are an economical choice and always tender and juicy but you could easily make this with chicken breasts and it would still be yummy.

BBQ Chicken Flatbread Pizza - An Easy Meal

Pizza nights really don’t get much easier than this when you're using store bought flatbread and an easy but flavourful chicken recipe like this one. While I love homemade pizza dough, let's face it store bought dough or flatbread is great for those nights you just don't have the energy or time to make your own dough. This chicken is also great as leftovers on rice, with noodles or of course on more flatbread!

Let's get to this easy peasy BBQ Chicken Flatbread Recipe shall we?

BBQ Chicken Flatbread

This BBQ Chicken Flatbread is an easy and quick meal to put together and it's packed with scrumptious flavours. It's perfect for lunch or dinner any day of the week.

Prep Time 5 minutes
Cook Time 20 minutes
Additional Time 4 hours 10 minutes
Total Time 4 hours 35 minutes

Ingredients

  • ⅓ cup olive oil, divided
  • ¼ cup balsamic vinegar
  • 2 tablespoon honey
  • 4cloves garlic, minced
  • 6 boneless skinless chicken thighs (1 ½ lb/675 g total)
  • ½ teaspoon each salt and pepper
  • 2-3 large flatbreads (depends on sizes)
  • 1 cup (250 mL) grape tomatoes, halved
  • 1lb fresh mozzarella
  • ¼ cup pesto
  • 1 cup baby arugula
  • large handful fresh basil, julienne cut
  • Balsamic reduction (optional)
  • Grated parmesan (optional)

Instructions

  1. Whisk together ¼ cup (60 mL) oil, balsamic vinegar, honey and garlic; pour into large re-sealable bag. Add chicken; seal bag, releasing as much air as possible, and massage chicken to coat evenly. Refrigerate for at least 4* hours or up to overnight if you can.
  2. Preheat grill to medium-high heat; grease grates well or cast-iron pan (we used a pan on the grill) Sprinkle chicken with salt and pepper. Grill chicken, flipping once, for 10 to 12 minutes or until well marked and cooked through. Let stand for 5 minutes; slice thinly.
  3. Brush some of the remaining oil over one side of each flatbread. Place flatbread on grill, greased side down. Grill for 2 to 3 minutes or until lightly browned and set on bottom. Brush tops with remaining oil; flip over and reduce heat to medium.
  4. Working quickly, divide chicken, tomatoes, mozzarella and pesto among pizzas.
  5. Cover and grill for 3 to 5 minutes or until the toppings are
    warmed. Remove from grill; top each pizza with arugula, drizzle balsamic reduction and parmesan before serving.

Notes

* As previously mentioned, you will get more flavour if you're able to marinate the chicken overnight but if you don't have time you can marinate it for less time, even a few minutes and you will still have a nice flavour.

** We used a cast-iron pan on our grill as it's easier clean-up for us and less flare-ups with grease from the grill. You can of course grill directly on the grates of the BBQ but keep a close eye on it.

You can cook the chicken on the stove in a pan, similar to how you would do it on the BBQ. To warm up the mozzarella and tomatoes you can either cover the pan at the end with the toppings on the flatbread (not the herbs) or warm them up in the oven as it might get a little moist doing it in the pan with the lid on.
